Just like my grandmother in Savanah La Mar, Jamaica use to make.. a traditional vinegar based table sauce.
Using the staple ingredients in a traditional jerk sauce or rub. Jamaican Scotch Bonnet sourced from Jamaica and grown in Seattle, Washington, thyme, allspice, ginger, garlic and white wine vinegar.
This can be used as a traditional table sauce like you would use hot sauce. It can also be combined with balsamic vinegar to create a flavorful salad dressing.
Also makes a great light marinade with chicken and fish, add pre or post cooking depending on taste.
When you get low just top off with more vinegar and keep the infusion going!
